Chocolate Cream Pie

- 1 prepared pie crust - 9 inch (use your favorite homemade recipe or get a store-bought crust)
- ⅔ cup granulated sugar
- ⅓ cup cornstarch
- ½ teaspoon salt
- 4 egg yolks
- 3 cups Milk
- 2 tablespoons butter
- 1 tablespoon vanilla extract
- 1 ¾ cups chocolate chips - milk chocolate, semi-sweet or dark
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- Prepare pie crust and cool on a wire rack
- In a medium saucepan whisk together sugar, cornstarch and salt
- In a small bowl, whisk egg yolks
- In a measuring cup with a spout, whisk together milk and beaten egg yolks
- Gradually add a small amount of the milk mixture to the saucepan, whisk until well combined
- Gradually add another small amount of milk mixture, whisk until well combined
- Slowly pour in remaining milk mixture, whisk constantly
- Over medium heat, whisking constantly, cook pudding until it begins to boil, this will take about 10-15 min
- Continue to boil for 1 min, whisking constantly
- Whisk in vanilla extract and butter until melted and smooth
- Stir in chocolate chips until smooth
- Pour pudding into prepared pie crust, cover with plastic wrap and place in the refrigerator to chill for at least 4 hours
- Whipped Cream
- Add heavy cream to large mixing bowl and whisk on high until soft peaks form
- Gradually add powdered sugar and beat until stiff peaks form
- Stir in vanilla extract
